monthly roundup:

Hiya, hussies! Hope you've all been having a fantastic month. I've been traveling a lot, but finally settling back in at home to regroup reorganize, and reset. There's truly nothing better than getting back into your routine and into the swing of normalcy, I'm a creature of habit. MONTHLY UPDATES, COMING RIGHT UP.

WHAT I'M READING:

Currently in between two books at the moment. One that is totally easy read, slightly spooky - Ask For Andrea. And one that is long and a CLASSIC - Lonesome Dove. I like to sometimes have two options depending on my mood. Lonesome Dove is about a group of retired Texas rangers in the old western days, who drive cattle and trek from Texas to Montana. I love to read this leisurely, as I mentioned, it's a LONG read. Ask For Andrea is definitely a thriller, about a group of women who were murdered and haunt their killer. It's not my favorite, but I'm going to finish it since I have a book goal to hit by the end of the year - trying for 30. I'm always adding to my book reccs, which can be found here!

WHAT I'M EATING:

I've been roasting a huge piece of beef chuck roast every week to use for all kinds of different meals. I usually grab a 3-4lb piece of meat, because that really gives us a ton of meat to work with, and my husband eats a ton. All I do is rub it down with lots of salt and pepper, drop it into a dutch oven, this one is my favorite, and let it roast at 325F for 3 hours, or until it's deeply browned and can pull apart easily. I use this pulled beef for tacos, in a red sauce with pasta, in quesadillas, or just literally straight up with a huge baked Japanese sweet potato. It's really unctuous and satisfying with the rendered fat and simple seasoning. If you're cooking for 1 person, don't freak out - you can freeze the extra meat for another day. I highly recommend trying this in your weekly meal prep. To save time, you can toss this into a slow cooker for 6-8 hours while you're away at work, or in an instant pot for 1hr10min for a quicker route. If you want to get fancy, add diced onion and carrot for even more flavor.

WHAT I'M WEARING:

SUMMER IS COMING. I'm equal parts scared of yet another miserable Texas summer, but hyped to get by the pool, travel to beachy spots and get a nice tan (with a huge hat over my face of course!). We just got back from a STUNNING wedding in the British Virgin Islands, so I shopped for a ton of cute new beach looks (mostly) all on Amazon. Everything is classic, simple and (again, mostly) affordable. Lots of these pieces I linked also come in a ton of different colors if you're more of a vibrant gal. Link to my summer looks LTK collection is here. Follow me on LTK to stay updated!

WHAT I'M OBSESSED WITH:

This one is slightly embarrassing but also who gives a fuck HAHA. I found this Rolex look-a-like that is so pretty and petite on the wrist. I used to love wearing watches, then got hooked on my apple watch. I got totally over the apple watch after several years, then was just annoyed having anything on my wrist. Apple watch PTSD. This is a perfect gold/silver watch that closely resembles the real deal, a Rolex. If I end up losing this dupe, I'll be way less sad than I would if she was real. This watch is also 36% off right now, so go run and get it if you love too! I bought this nifty watch sizing kit to go along with it, because I did need to take a few links out. Here’s a link to my Amazon Storefront if you want to see what I'm buying as of late.

WHAT SKINCARE I'M LOVING:

All hail THE SKINNY CONFIDENTIAL CAFFEINATED SUNSCREEN! She is currently sold out because, yes, it's that damn good. GET ON THE WAITLIST for restock using the link aboveI made a vow for my my New Year resolution to stop wearing makeup as often as I can. Like who needs a full face of foundation every single day???? We pay so much to make our skin dewy and flawless, why would we cake on shitty makeup? Seems counterintuitive to me. That being said, all I'm doing these days are my full skincare routine, then I do 2 pumps of TSC SPF, and 2 pumps of Toups & Co citrus oil. On top of that i'll swipe on some Saie bronzer and blush, pat that in, brush my brows up with caster oil and GO. I look glowy all day long, and it's truly GIVING skin.

WHAT WORKOUT I'M DOING:

This month is about functional training. Back to basics, sort of a de-load type of vibe. I'll still be going to the gym 5 days a week, but will be going easier on weight and slowing down my lifting pace a bit. I spent the last month GOING HARD and now I owe my body a lot of stretching, light movement, and a little slow down. I base all of this on how I'm feeling. I try to be very in tune with myself and listen to what my joints and muscles are telling me. This month will be a lot of sauna and stretching before bed, to really get the blood flowing to sore muscles and keeping myself flexible. I'll be incorporating yoga, lots of core work, and long leisurely walks. Next month, I'll hop back into my normal heavy lifting. I'm definitely still getting in my 10k steps a day, and HIGHLY recommend this walking pad for indoor use (currently it's 20% off!), and while watching Vanderpump Rules reruns hehe.
